Spaetzle (quenelles de farine)

Les spaetzle sont un accompagnement très courant en Alsace, que l’on mange avec des viandes en sauce ou des gibiers. Il s’agit de petites quenelles à base de farine et d’œufs, que l’on appelle aussi
« wasserstriewele », ou « mehlknepfle ».

Il y a plein de variantes et de déclinaisons, car l’utilisation de farine et d’œufs était d’usage courant à la campagne.

Lorsque j’étais enfant, c’était toujours un grand événement lorsque ma mère nous en faisait, car nous aimions beaucoup ce plat qui accompagnait à merveille un rôti de bœuf en sauce, que nous dégustions avec  de la confiture d’airelles.

Nous trouvons maintenant des spätzle précuits sous vide dans les grandes surfaces, mais qui n’ont pas la même saveur que celles que l’on fait soi-même.
Il est tout à fait possible de préparer les spätzle à l’avance ( c’est à dire avant l’arrivée des invités !) et de les réchauffer à la poêle au dernier moment.

Comme vous le verrez, la recette est très simple, mais la préparation est un peu longue et nécessite un coup de main, raison pour laquelle je me propose de vous décrire la recette en images.

Ingrédients pour 4 personnes:

- 300g de farine
- 3 oeufs
- 20 cl d’eau
- 1 c. à café rase de sel fin
- un nuage de noix de muscade ( 3 coups de râpe sur la râpe à noix de muscade)

Versez la farine tamisée dans un bol, ajoutez le sel et la noix de muscade. Cassez les œufs. Mélangez les ingrédients à la cuillère ou au batteur, en ajoutant progressivement l’eau pour obtenir un pâte souple et fluide. Laissez reposer la pâte environ une heure.

Il y a différentes façons de former les spätzle; il existe même un ustensile pour cela. Je vous propose de les faire au couteau, comme je l’ai appris.

Faites bouillir de l’eau salée dans une grande casserole. Mettez une cuillerée de pâte sur une planchette, que vous placez au dessus de l’eau bouillante et poussez des lanières de pâte dans l’eau. La pâte doit être suffisamment fluide pour couler un peu.

Les spätzle se cuisent par petites quantités et remontent à la surface lorsqu’ils sont cuit. Sortez-les à l’aide d’une écumoire, et réservez dans un plat après les avoir passé rapidement sous de l'eau froide. Renouvelez l’opération pour utiliser la totalité de la pâte.

Faites revenir les spätzle dans une poêle chaude avec un peu de beurre, jusqu’à ce qu’ils soient bien dorés. Servez-les chaud, décorés de croûtons de pain dorés dans une poêle.
